I think you can use 1/4 cup of silken tofu as a substitute for an egg.

I have been looking for a liquid egg substitute product and though Toffuti had one. My husband is a Chef and struggles with the powder. Do any of you know if Tofutti has such a product, and if not, does one exist. Currently I am using Egg Replacer (a yellow box). Any help would be appreciated.

I looked around the web a bit and noticed that the general consensus is that they target the lactose intolerant market more than they do the vegan market (though I'm willing to bet most of their revenue comes from vegan customers).

The Tofutti company is not a vegan company, but a kosher company. That's why its ice creams and other faux dairy products are vegan but not the cookies.
