It's really hard to find a decent article on vegetarianism, I've been noticing. I unfortunately cannot become a vegetarian as I have severe allergies to fruits, vegetables, and nuts, but I can eat some cooked stuff.
I just wanted to say thanks that I actually found a balanced site instead of a "hate all meat-eaters."

My husband and I find that we don't miss meat at all. Meat-based dishes often taste really bland to us now when we eat out (which is when we still eat meat occasionally); a big slab of mostly tasteless, sometimes gristly food? Yick. Give us tasty veggie cooking any day.

Hi, your recipes are really interesting. I'm always on the lookout for good ones! I've started a blog on learning to cook South Indian Vegetarian cooking from my mother in law, with my own photography.

Great reading,

First time reader. I think you do have a somewhat balanced approach to this stuff. I'm coming from the other side of the fence, so to speak, although I was a semi-veg for about six years. The Times, and it's probably much worse when you look elsewhere in the media, seems to have to pretend to cringe at anything that isn't the average American diet of fast food and similar stuff. I will say one thing, though, vegetarian food seems to have evolved quite a bit since when I first stopped eating meat back about 10 years ago. Some of this comes at the expense of processing techniquest which are unhealthy, but some are just gradually learning how to make things taste better without the use of animal fat, meat, etc. In the end, the media is an easy target. They often get things completely wrong and unfortunately a lot of people take the stuff they read as verbatum. At least blogs are out there now that can give extra voices which would never get read by the majority of folks reading the letters to the editor...

Pressed and Extra-Firm Tofu are completely different. You can get pressed tofu in some chinese markets, and yes, I've seen it with a brown exterior.

The texture is very different from regular tofu, much chewier. It's used as a faux chicken/meat in some asian dishes. Not so fond of it am I.
