The other night I made a chicken salad-like recipe from The Vegetarian 5-Ingredient Gourmet that had crumbled tempeh mixed with curry, non-dairy mayo, and mustard. I had it with some crackers as a light dinner, but it would have also been a nice side dish for a more substantial meal.

Last night I had an Amy’s Organic Cheese Pizza. We really want to try the grilled vegetable one (it’s cheeseless) - but my store doesn’t sell it.

08|Oct|2001 3We tracked down one of the cheeseless grilled vegetable Amy’s Pizzas yesterday. I must admit that I think I’ll stick with the cheese. It was smaller than the cheese pizza. What I thought was a black bean sauce when it was frozen turned out to be a whole lot of carmelized onions. There weren’t as many peppers as I had hoped, there were barely any mushrooms — and there were way more artichokes than should be on a pizza that doesn’t list them as one of the toppings.
We’re going to try Amy’s black bean enchilada’s next — I’ll let you know how those are!
