World Vegetarian Day
Yesterday was World Vegetarian Day (which I didn’t even know until yesterday, so don’t feel bad if you didn’t know, either), and though I didn’t really do anything different, I did cook up a squash, green bean, and potato stew served over rice. The recipe was from Vegan Meals for One or Two, a book I find myself going to when I want a simple meal that won’t yield a week’s worth of leftovers. This one was a good dish, though it could have been a bit thicker. Not a bad meal-in-a-pinch, though.

You can always thicken up a stew/soup with a litlle flour, any variety will do.
World Vegetarian Day beats “Edge Day” by leaps and bounds.
